“I worked inside one of those huge multinational factories,” he said. “All those ‘different’ supermarket loaves? Same factory, same machines, same long list of numbers on the ingredient label. They create the illusion of variety.

“We just use flour, water and salt – and our sourdough starter to deliver magic.”

This is sourdough, made playful; creative; impossible to walk past without slicing off a warm piece “just to taste”.

“We use 100% Australian certified organic flour,” James said. “Everything from sourdough and baguettes to focaccias, donuts and pastry.”

“Take the dough with you,” James insists. “Do the folds at the table if you need to.”
