Culinary Conversations with Club Hotel Namba

Back for another year, Melanie Rosettenstein previews what’s on the menu ahead of Culinary Conversations.

Could there be anything more delightful than a gathering of local producers, brewers, distillers and chefs – all the people who make the Sunshine Coast so delicious – in one of our area’s most iconic and welcoming locations?

Following on from Hello Sunshine Magazine’s sold-out Podcast + Pinot events of 2022 and 2023, John Caruso, host of Everyone Has A Story – Conversations from the Sunshine Coast and Noosa, is back with even more delicious conversations this time at Nambour’s refurbished and revitalised, Club Hotel Namba.

Since reopening its doors in 2022, the historic landmark which has been privy to countless conversations and good fellowship, has gone from local watering hole to a vibrant destination pub and the cornerstone of Nambour’s social scene. It’s here, steeped in a century of heritage as a community watering hole, that Culinary Conversations will take place on Friday 26 July, as part of The Curated Plate 2024.

Those that attended last year’s Podcast + Pinot at The Doonan will recall the mouthwatering menu of local flavours and culinary expertise showcased by Head Chef Wayd Bailey.He is now firmly ensconced at Club Hotel Namba on a mission to honour and elevate classic pub food with seasonal, local ingredients and tasty twists on old favourites. For Culinary Conversations, he and the kitchen team have been meeting with local producers to cook up ideas for a specially-curated menu using the freshest local produce.

For starters – and with a new charcoal grill in place – he is excited about the prospect of char grilling some Good Growin’ gourmet mushrooms with garlic and seaweed over charcoal to bring out the earthiness; local seafood is bound to feature or what about sous vide slow-cooked pork jowl with a watercress, radish and fennel salad glazed with red wine vinegar caramel? He is also playing around with a twist on the classic Chicken Schnitty with a Bush-spiced Quail Schnitzel incorporating native ingredients such as bush tomato and served with native jams or chutney; and those who remember last year’s showstopping Woombye Truffle Brie Cigars, will be salivating for what Wayd dishes up this time around with Woombye Cheese’s Blackall Gold Washed Rind – the cheese that won a Silver medal at the 2024 World Cheese Awards!

While he is only tempting us with ideas and teasing us with flavours at this stage, be sure to check online for the final menu – or turn up on the day knowing that whatever comes out of the kitchen will be a showcase of local flavours that is sure to surprise and delight!

Speaking of Woombye’s ‘world’s best’ award winners, the crew from CAVU Distilling won World’s Best Vodka for their Sunshine & Sons Original Vodka at the World Vodka Awards and a Gold Medal at the 2024 World Drinks Awards for their Nil Desperandum Botanical Rum– they’ll be creating a special welcome cocktail and founder Matt Hobson will be part of the special panel of guest speakers.

What’s a pub without beer? The team from Heads of Noosa will also join in the action as well as Wayd and some of the featured growers and producers that he will be showcasing on the plates on the day.

So, with a mouthwatering meal featuring the freshest local ingredients by one of the area’s most recognised chefs plus insightful and entertaining conversations with players from the region’s thriving food and beverage industry, Culinary Conversations is a not-to-be-missed event. Make sure you get in early before tickets sell out.
