Sauerkraut, Smoked Bacon and White Bean Soup with Sourdough CroutonsÂ
The nights are getting colder so it’s time to snuggle up with Matt Golinski’s sauerkraut, smoked bacon and white bean soup with sourdough croutons. Try this soup, your gut will thank you for it!
Serves 4Â
Ingredients:Â
1 onion, finely dicedÂ
1 clove garlic, slicedÂ
1 carrot, dicedÂ
1 stick celery, dicedÂ
200gm smoked bacon, dicedÂ
30gm butterÂ
30gm plain flourÂ
1lt Boneafide Chicken StockÂ
250gm cooked cannellini beansÂ
1tbs chopped rosemaryÂ
1 cup Nourishing Wholefoods HappykrautÂ
250gm Lust for Crust sourdough, cut into 1cm diceÂ
50ml olive oilÂ
salt and pepperÂ
Method:Â
SautĂ© the onion, garlic, carrot, celery and bacon in the butter until soft and starting to colour.Â
Stir in flour and cook for 2 minutes. Â
Slowly add the hot chicken stock, bring to a simmer and add the cannellini beans.Â
Simmer gently for 10 minutes.Â
Toss the sourdough cubes in the olive oil and bake in a 180°C oven for 10 minutes or until golden and crunchy.Â
Stir the sauerkraut into the soup and divide between 4 bowls.Â
Sprinkle with chopped rosemary and top with croutons.Â
